Improve retrieve_tools diagnostics for annotation filters and automation-critical tools

Summary

I am using MCPProxy as a local lightweight gateway for many MCP servers, with retrieve_tools as the main way to keep tool schemas out of the agent context until needed. This works very well overall, but I ran into a failure mode where a tool existed and was callable, yet was effectively hidden from routine automation because annotation-based filtering removed it without a very actionable explanation.

OAuth regression for runlayer backed servers

I was helping someone set mcpproxy up, and they ran into these errors to oauth:

I had been running off the version on https://github.com/smart-mcp-proxy/mcpproxy-go/pull/255 and was able to reproduce once i merged main.

[Bug] MCP server connection issues

Some MCP servers aren't very stable. It might be their implementation issues or different protocol versions/approach to development.

One of the most annoying but also a very desirable is Jetbrains MCP. If i add SSE endpoint its just doesn't loads any tools. If i try stdio - it loads, but might lose the connection. Such connection issues can lead to dashboard freeze, which is a not a big deal most of the time. Application might even hang and only forced kill helps.

Listen port config setting being ignored

Avoid storing credentials in mcpproxy.json in plaintext

Right now, if you need things like API keys, hostnames, or anything else sensitive, you have to store it in plaintext in the config files. This means you can't easily store mcp_proxy.json in version control.

I'd love to be able to use something like macOS Keychain, 1password, etc. I could imagine having templating in command, env, etc, and expose things that way. I've used keyring-rs bindings for node before. I can't tell if this is golang bindings for it, or just using the same keyring name:
